The only one in the world made with the almost extinct caste, Jampal. A differentiated sparkling wine, of limited and careful production. We use the classic method in the elaboration of this sparkling wine with a fine bubble, with notes of fruit and brioche, as well as a brilliant acidity, which makes it versatile in harmonization and ideal for any moment.
Grapes: 100% Jampal.
Winemaker As: Ricardo Noronha.
Soil: Clay Limestone.
Climate: Moderate mediterranean, influenced by the Atlantic Ocean.
Process: Manual harvesting in small 15kg cases to respect the integrity of the grapes. Gently crushed with pneumatic presser. From the delicate crushing we take the most noble part of the juice which, after a static clarification, is fermented with temperature control. Then it stages for 24 months “sur lie”, after the second fermentation inside the bottle.
Color: Citrus White.
Flavor: Fruity notes with citrus nuances. The aromatic complexity deepens during the tasting. There are honey notes and flavors of refined complexity.
Palate: The acidity is firm and gives freshness. A lot of balance and elegance.
Gastronomy: Perfect match for portuguese typical suckling pig, seafood, cheese boards and any type of deep fried food.
Serve at temperature: 7ºC – 9ºC.
